[2.0] Evaluate field usage across entire metadata collection, suggest fields to remove in 2.0

Is your feature request related to a problem? Please describe.
There are fields that are not being filled out by users. If they really aren't useful they should be removed.

Describe the solution you'd like

• For each modality, assess the % of fields that are being used. Can use the MetadataStatus table in redshift for this
• Find fields that are nearly 100% ignored and discuss w/ team for removal
• Remove unused fields, or move them into extensions

Additional context
For example, NSB tracks recovery time from surgery. Are other people tracking this? Could go in an extension.
