Where the ip is supposed to be there is just - - -.
With varnish-3.0.4 revision 9f83e8f and Apache/2.2.15 (Unix).
Apache log example:

are you using cloak.vcl?
if you are running apache on the same box then security.vcl will remove x-forwarded-for and such
