- 12 oz dried udon or lo mein noodles
- 5 tablespoons soy sauce
- 3 tablespoons unseasoned rice vinegar
- 3 tablespoons packed dark brown sugar
- 1 tablespoon sesame oil
- 1/4 neutral oil
- 5 teaspoons sesame seeds
- 1 1/4 teaspoons red pepper flakes
- 12 scallions, white and g reen parts thinly sliced, reserve separately
- 4 fried eggs to serve, optional
- Boil noodes until al dente, drain and rinse
- Whisk together soy sauce, vinegar, sugar, and sesame oil in largish bowl
- In oil, cook esame seeds and pepper flakes until fragrent, 3-5 minutes
- Off heat, add scallion whites then add to soy sauce mixture
- Add cooked noodles, scallion greens and toss
