Halibut works really well |
- 1 kg halibut filet, cut into inch thick sticks [what's with the metric/imperial measures, is this canadian??]
- 1 c flour for dredging
- 2 c panko or regular breadcrumbs
- 2 eggs
- 1 tsp old bay seasoning
- 2 tsp salt
- Olive oil or canola oil for frying
- Preheat oil to 340F in a high sided skillet
- Remove halibut skin and cut into sticks. Season with a pinch of salt and a pinch of Old Bay
- Place flour on a plate. In a bowl, whisk the eggs. On next plate place breadcrumbs seasoned with a pinch of salt and seasoning
- Pick up fish and roll in flour until covered, roll it in the egg wash. Lift with other hand and place in breadcrumbs, roll until covered.
- Place gently into the hot oil avoiding splashes. If oil covers the filet it will take about 3m. If not, turn the fish after a few minutes. When fiirm to the touch and golden brown, remove from oil and eat immediately.
