- 1 - 1 1/2 lb salmon fillets
- 1/2 c dry white wine
- 1/2 c water
- a few thin slices of yellow onion and/or shallots, peeled and sliced thin
- several sprigs of fresh dill or sprinkled dried dill
- a spring of fresh parsley
- Combine all but the fish in a pot; bring to a simmer
- put fish skin side down on sauce, cover
- cook for 5 minutes or longer if necessary
