Poached Salmon

Ingredients

  • 1 - 1 1/2 lb salmon fillets
  • 1/2 c dry white wine
  • 1/2 c water
  • a few thin slices of yellow onion and/or shallots, peeled and sliced thin
  • several sprigs of fresh dill or sprinkled dried dill
  • a spring of fresh parsley

Steps

  1. Combine all but the fish in a pot; bring to a simmer
  2. put fish skin side down on sauce, cover
  3. cook for 5 minutes or longer if necessary
