Can we use Cocalc?
It lets students create "projects" and share them between each other. Just like overleaf/google docs.
Projects can have Jupyter notebooks which can be edited collaboratively in real time.

Real time collaboration in vanilla jupyter is a work in progress:

Seems like it could work in jupyter lab
