How hard is it to collect datasets from all different cantonal dialects from Switzerland?

If there is a Swiss German Language Annotation Analyse, how long would it take to analyse the speech and voice recognition and use Apple Siri for example, to make Speech-to-Text, or Text-to-Speech happen?

I believe that the AI would need to have active listening skills with the ability to understand verbal nuances in the Swiss German dialect, including the variations across different provinces and territories.
