Allow specifying a non-default organization

The various endpoints expose this through a header, which we currently just ignore. We should find a way to add this; it will take a bit of thinking about how to best add it to our API surface, since we don't currently expose this and either need to break everything or do something like add a builder-like pattern or client-global setting.
