What should I see in lnd.log when SCB restore is completed?

Running restore by instructions from https://github.com/lightningnetwork/lnd/blob/master/docs/recovery.md

All I can find is "it will take a day or two".

What line should I see in lnd.log when restore scan/channels close requests are completed?

It's expected to see something like this:

[ERR] HSWC: ChannelLink(xxxxxxxxxxxxxxx:0): failing link: unable to synchronize channel states: unable to sync commit chains with error: unable to resume channel, recovery required

But you should be able to see the progress by looking at lncli pendingchannels. The SCB restored channels should go from waiting_close to waiting_force_close and then disappear from the list (and appear in lncli closedchannels).
If they are stuck in waiting_close, it means the other party is not reacting to the request to force close and manual intervention might be needed.

I'm 99% sure I had closed all the channels before I needed to go to restore process. So I can't find any of those in my log.
Is there any way to see if my backup included any channels at all?

You can use my chantools to dump the contents of a backup file. Though you'll need to enter your seed because the backup is encrypted: chantools dumpbackup --multi_file <the_file>. Then you can look up any channels on a block or network explorer to find out if they've been closed.
