Option for ensemble dimension across multiple collections

In some cases multiple collections should be treated as a single collection with a new dimension - this would allow for operations such as ensemble means. The specifics of how this would be implemented are not clear at the moment, but I'll update this ticket with ideas when I start to tackle it.
