After installing and running myst-node through the windows all inclusive installer, I was on docker 4.0.0. A new version 4.0.1 was released and docker gave me the option to update, so I did. Soon after the update, the myst-node stopped working and docker kept saying engine stopped running. After a lot of troubleshooting, all system requirements and settings were still valid, hence, i reverted back to docker 4.0.0 from their website and reinstalled docker completely. Re-installed the windows installer for myst-node too. All old settings were still present and node and docker runs fine now.
Not sure if this was a bug or just an unfortunate system error on my side.
