[BUG] the ./docs directory is a straight copy of the Elasticsearch docs and should be removed in favour of the documentation-website #39

What is the bug?

When this was forked, it forked the docs from the Elasticsearch plugin. However, in opensearch-project/documentation-website#8074 we are migrating the docs PROPERLY over to OpenSearch documentation-website.

These docs should be deleted.

What is the expected behavior?

Plugin shouldn't have those detailed docs...

This ticket is now done! Just for reference, the migration into the documentation website is being tracked in this PR: opensearch-project/documentation-website#8074
