I got the following touchscreen from Amazon: Jun-Saxifragelec Portable Monitor 7 Inch Touchscreen - Capacitive IPS Display 1024 x 600, Second Screen with Laptop, Mini HDMI - Compatible with Raspberry Pi 4/Pi 3 B+, for PS4 etc
The screen can be powered directly from the Raspberry Pi3 and is showing a picture. When I am using my USB keyboard I can browse through the directories, but as soon as I touch the touchscreen the Pi stops working.
It would be really great to get such touchscreen working, because then I can finally get rid of the keyboard. I do not want to use hardware buttons, because this would just add more cables to it. The Pi is stored somewhere hidden and only the display (and currently also the keyboard) are visible.

Pretty sure this isn't currently possible, because the Pi1541 doesn't recognize a mouse, which is essentially what most touchscreens are.
I feel your pain though, and got around the issue initially by using a wireless keyboard (Logitech K400), and eventually made my own USB macro pad module to mount to the monitor, so I didn't have to mess with the hat's nav buttons at all.
