Since EOSIO has been rebranded to Antelope the branding in the docs has to be changed accordingly.

Didn't double check, but seeing a few changes!

@3dkrender Also updated a few occurrences of "EOSIO" to "Leap" and some links leading to the old docs on https://developers.eos.io/.

Let's try to make sure we change those whenever we can spot them!
Please make sure to sync your branches from main, as we had to a few merge conflicts dew to my absence
