Need to revisit docs related to API Policies and remove Choreo Connect mentions

Description:

We need to revisit docs related to API Policies and remove any mentions on Choreo Connect as we have removed the Choreo Connect Gateway support. Refer [1] to [4] for pages that either need to be fixed/removed (note: there may be more pages that need to be evaluated).

Also, screenshots have to be updated as we no longer have a section to select the API Gateway. We may also have to revisit the doc content to remove any outdated content.
