2025 REFFESCAPE Updates

Here are the updates for the 2025 Season:

New configuration files for the 2025 REEFSCAPE game
Cleaned up the folder structure which was getting cluttered with all the year folders
Updated the documentation
Moved Excel examples to the year directories and removed the Excel folder. No need for the Excel VBA code anymore
