Add new datasets and models

Major changes:

• Add support for several datasets: EuroSAT-RGB, ChestX, Imagenet-R, CropDisease, Cars-196, MIT-67, RESISC-45, ISIC, CUB-200 (with ViT).
• Add new models: STAR-Prompt, CGIL, AttriCLIP, and CLIP.
• Add the MammothBackbone base class and support to ViT as a Mammoth backbone, covering all Transformer-based methods.

Minor changes:

• Quality of life improvements.
• Improved docs.
• Add new tests.

Tests pass.
