ee.jakarta.tck.persistence.ee.entityManagerFactory.Order looks like a valid (mapped) class reference which in my local #1442 branch looks right.

Describe the change
Takes the EE10 transformed persistence.xml and maps the class names to the EE11 version and add the persistence.xml file to the test repo.
