without double quote, we will get

unexpected character "." in variable name near "Org.\nGF_AUTH_ANONYMOUS_ORG_ROLE=Admin\n\n# default\n#GF_USERS_DEFAULT_THEME=light\n\n# plugins\n#GF_INSTALL_PLUGINS=grafana-worldmap-panel,grafana-piechart-panel\n"

when run

env FASTLY_API_TOKEN=$KEY docker-compose up

docker mac desktop version is 4.1.1

$ docker-compose --version
Docker Compose version v2.0.0
